-Baking powder - double acting: 1 teaspoon = 1 1/2 teaspoons regular baking powder

-Baking powder: 1 teaspoon = 1/4 teaspoon baking soda with 1/2 teaspoon cream of tartar

-Butter: 1/2 cup = 1/2 cup shortening with 1/4 teaspoon salt

-Buttermilk: 1 cup = 1 tablespoon vinegar or lemon juice and enough milk to equal 1 cup total liquid

-Cake flour: 1 cup = 1 cup minus 2 tablespoons all purpose flour

-Cornstarch: 1 tablespoon = 2 tablespoons flour

-Dry mustard: 1 teaspoon = 1 teaspoon mustard

-Egg: 1 = 1 teaspoon unflavored gelatin, 3 tablespoons cold water and 2 tablespoons plus 1 teaspoon boiling water

-Milk - skim: 1 cup = 1 cup water, 4 tablespoons nonfat instant milk

-Milk - whole: 1 cup = 1 cup water, 4 tablespoons nonfat instant milk, 2 teaspoons melted butter OR 1/2 cup water and 1/2 cup evaporated milk

-Molasses: 1/2 cup = Honey: 1/2 cup

-Self rising flour: 1 cup = 1 cup all purpose flour with 1 1/2 teaspoons baking powder and 1/2 teaspoons salt

-Tomato juice: 1 cup = 1/2 cup tomato sauce with 1/2 cup water

-Unsweetened chocolate: 1 ounce = 3 tablespoons unsweetened cocoa and 1 tablespoon shortening or margarine

-Whipped cream: 1 cup = 1 egg white whipped with one sliced banana

-Whipping cream: 1 cup = 1/3 cup butter, 3/4 cup milk

-Wine: 1 cup = 1 cup apple juice
